Recipe: Cheesy Cauliflower Soup


  • 2 tablespoons butter
  • 1/2 white onion, chopped
  • 2 cups of cauliflower, riced
  • 1 cup of chicken broth or stock
  • 2 ounces cream cheese
  • 1 cup heavy whipping cream
  • pink Himalayan salt
  • black pepper
  • 1/2 cup of shredded cheddar cheese

Recipe Directions

  • Saute onions

    In a medium saucepan over medium heat, melt the butter. Add the onions and cook stirring occasionally, until softened, about 5 minutes.

  • Add Cauliflower

    Add the cauliflower and chicken broth, and allow the mixture to come to a boil., stirring occasionally. Lower the heat to medium-low and simmer until cauliflower is soft enough to mash, about 10 minutes (15-18 minutes if you used cauliflower florets instead of riced.)

  • Mash

    Add the cream cheese, and mash the mixture.

  • Blend

    Add the heavy whipping cream and puree the mixture in your blender and then return back to pan to reheat it a bit. Season the soup with pink Himalayan salt and black pepper. Serve with shredded cheddar cheese on top. Makes 4 servings.

  • Variations:

    • Top with crumbled bacon and/or scallions.
    • Add 1 chicken breast (boiled and shredded) and extra cup of chicken broth at the blender stage.
