Recipe: Deej’s Low Carb Mini Peanut Butter Pies


  • 1/2 cup natural (no sugar added) peanut butter
  • 3 ounces of (whole) cream cheese
  • 8 ounces whipped topping
    (either sugar free Reddi Wip or non-dairy Almond Milk Reddi Wip)
  • 1 1/4 cup of Swerve confectioner’s sweetener
  • 2 packages (15 count, each) Athens Chocolate Phyllo Shells
  • Flaked sea salt for topping

Recipe Directions

  • Mix

    In a medium-sized mixing bowl, combine peanut butter and cream cheese until light and fluffy with an electric mixer.

  • Add

    With the mixer on low speed, alternate adding whipped topping and powdered sugar, finishing with the whipped topping.

  • Fill

    Spoon or pipe a tablespoon into each shell. Garnish as desired with flaked sea salt or shaved dark chocolate.
