Recipe: Tandoori Salmon with Cucumber Sauce



Cucumber sauce

    • ¾ cup mayonnaise or sour cream
    • ½ cucumber, shredded
    • 2 garlic cloves, minced
    • ½ lime, the juice
    • ½ tsp salt


Recipe Directions

  • Preheat Oven

    Heat the oven to 350°F (175°C).
    Mix tandoori seasoning with oil and cover the salmon.

  • Bake

    Place in the oven for 15–20 minutes, or until the salmon flakes easily with a fork.

  • Meanwhile

    Make cucumber sauce while salmon is in oven. Mix crushed garlic, lime juice, shredded cucumber (squeeze out the water first) and mayonnaise and/or sour cream in a bowl.

  • Serve

    Serve salmon (perhaps on a green salad, see tip) and top with cucumber sauce.

Tip: Add a cripsy green salad: Chop up a bell pepper, scallions, and avocado. Combine with some arugula on a platter. Drizzle with lime juice!
