One of the most iconic champagne cocktails out there and Deej’s fav drink.
Add gin, lemon juice and simple syrup to shaker with ice. Put on top and give it a vigorous shake for 8-10 seconds.
Strain pour into a chilled champagne flute. Add a twisted lemon peel. Enjoy!

Exchange simple syrup with an ounce of water sweetened with few drops (to taste) of liquid Stevia. I would start with 2-4 drops as Stevia is pretty sweet. However you need some sweetness to offset the tartness of the lemon juice.
The gin and lemon juice has zero carbs. Champagne is about carbs per ounce and you’re only using about ounces. So overall with substituting the simple syrup with the alternative indicated above this is a delicious, low carb adult beverage to enjoy. Perfect for brunch – better than mimosas, IMO.
