Recipe: Mississippi Crockpot Pot Roast

Ingredients

  • 3 lb chuck or sirloin tip roast
  • 2 tbsp olive oil
  • salt & pepper to taste
  • 1 packet ranch dressing mix
  • 1/2 cup salted butter 1 stick
  • 8 peperoncini peppers
  • 1/2 white onion
  • 1 tbsp of minced garlic

Recipe Directions

  • Heat

    Heat up a large skillet on high until hot. Add oil to hot skillet.Take a paper towel and make sure you dry both sides of the pot roast. Season with a little bit of salt and pepper. Add the roast, cook for about 2-3 minutes until it is golden brown.Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.

  • Transfer

    Add chopped onion to slow cooker. Transfer meat to slow cooker and place on top the bed of onions. Sprinkle packet of dry ranch over pot roast.Place stick of butter on top of roast, put garlic on top of butter and then place peppers on and around roast.

  • Cook

    Cover and cook on low for 7-8 hours (or on high for 4 hours). Enjoy!

Tip: Serve with riced garlic cauliflower and steamed green beans sprinkled with sea salt.
